Here’s another awesome hummus recipe. I found this one at http://naturallyella.com/2010/01/17/sun-dried-tomato-and-basil-hummus/ Can not wait to try this one.
- 2 can garbanzo beans, drained
- 2/3 cup sun-dried tomatoes, juice reserved
- 1 1/2 tablespoon tahini
- 2 tablespoon lemon juice
- 1 tablespoon olive oil
- pinch salt and pepper
- 1/2 cup fresh basil
- Combine all the ingredients expect reserved liquid from sun-dried tomatoes in food processor.
- Turn processor on and continue to run, adding enough of the reserved liquid to bring hummus to desired consistency.
