Stuffed Buffalo Chicken Breasts

I found this recipe at http://www.skinnytaste.com/2012/07/stuffed-buffalo-chicken-breasts.html from Punchfork.com. We like spicy foods and I have been looking for an excuse to attempt to make a vegan Hot Wing Sauce and this seems like a good start. Image from skinnytaste.com.
Ingredients:
  • 1/4 cup shredded cheddar
  • 4 wedges light Laughing Cow blue cheese
  • salt and pepper, to taste
  • 5 (3 oz each) thin boneless chicken breasts cutlets
  • Bread crumbs
  • 1 tbsp light mayonnaise (I am using Vegan Mayonnaise)
  • 6 tbsp hot sauce or substitute my hot wing sauce 
  • 1 tbsp lemon juice
  • 2 tsp light butter (vegan butter)
  • 1/2 tsp garlic powder
  • olive oil
Directions:Pre-heat the oven to 400°F. Lightly spray a baking dish with oil. Mix cheddar, laughing cow cheese, garlic powder, salt and pepper in a dish. (I am adding a dash of hot wing sauce to the mix too.)
Lay out the chicken cutlets, placing even amount of mixture in the middle and spread in the center.In one bowl make a breading station out of bread crumbs. In another bowl combine mayonnaise, 1 tablespoon of hot sauce, and lemon juice as a dredging mixture. Roll chicken breasts in the mayonnaise mixture, then into bread crumbs, and put on a lightly oiled pan, seam side down.
Lightly drizzle top of chicken with olive oil. Bake 30 minutes. While the chicken cooks, melt butter and mix with the remaining hot sauce and garlic powder. Drizzle buffalo sauce over finished chicken breast and serve. You can also use pre-made hot wing sauce instead.
