Oven “Fried” Pickles

I love fried pickles almost as much as I love Fried Green Tomatoes. I have been making them and eating them with my family my whole life. While I was in college I made these all the time, but my recipe was super simple. I found this recipe at http://penniesonaplatter.com/2011/10/07/oven-fried-pickles/ and I would really like to give the baked method a shot since it seems like it might not be so messy. There are a ton of great recipes at http://penniesonaplatter.com/ go check it out and maybe you will find some you want to make as well.
My fried pickles are super easy. I just take a jar of the cheapest pickles (usually mt. olive) I can find and the cheapest pancake batter I can find and coat the pickles with the batter and fry in olive oil. The are yummy and addictive, but not very good for you.
Oven Fried Pickles

Oven “Fried” Pickles

Prep Time: 20 minutes

Cook Time: 6 minutes

Total Time: 26 minutes

  • 1 jar whole pickles, sliced into thick slices (I use Claussen Kosher Dill) I prefer thin pickles but i’ll give this a shot.
  • 2 eggs
  • 1/3 cup flour
  • 1 Tablespoon Worcestershire sauce
  • 1 teaspoon hot sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon Cajun seasoning
  • 1 teaspoon black pepper
  • 1 1/2 cups Panko bread crumbs
  • Ranch dressing, for serving (I prefer plain old ketchup)

Adjust the oven rack to the center position. Preheat the broiler to HI. Set a wire rack on top of a rimmed baking sheet. Spray with nonstick oil; set aside.

In a medium bowl, whisk together the eggs and flour. Add the Worcestershire sauce, hot sauce, garlic powder, Cajun seasoning, and black pepper. Stir until fully incorporated.

Place the Panko bread crumbs in a shallow bowl. Dip a pickle slice first into the egg mixture, then coat with the Panko bread crumbs. Set on the greased wire rack. Repeat with remaining pickle slices.

Broil for about 3 minutes on each side. Serve immediately with Ranch dressing.

Freezing Instructions: Before broiling, place coated pickle slices in a single layer on a parchment-lined baking sheet. Flash freeze for 20 minutes. Transfer frozen pickle slices to a labeled freezer bag. When ready to prepare, preheat the broiler to HI and broil on the greased wire rack set in a baking sheet for 4-5 minutes on each side.
